09/24/2024 |

I asked you what treat I should cake next, and of course Cosmic Brownies and Ah Caramel were both in the answers! So I caked them BOTH! Comment below so we can solve this once and for all: Which one is better?!

Recipe for my cosmic brownie cake below!

Cosmic Brownie Cake
4 cups all purpose flour
4 cups sugar
1 1/2 cups dutch processed cocoa
1 tablespoon + 1 teaspoon baking powder 1 tablespoon baking soda
4 eggs
1/2 cup vegetable oil 1/2 cup melted butter 1/2 cup sour cream
1 1/2 cups whole milk
2 cups hot brewed coffee

Preheat oven to 350 degrees. Line the bottom of two 8” square pans with parchment paper.
Sift all the dry ingredients together. Whisk all the wet ingredients together, except the hot coffee, in a large bowl. Stir the dry ingredients into the wet ingredients. slowly stir in the hot coffee.
Divide the batter evenly between the two prepared pan. Bake for 1hour, rotating halfway.

Dark Chocolate Frosting
1 cup whipping cream
8 oz semi sweet chocolate, 70%
2 1/2 cups unsalted butter, room temperature 3 cups icing sugar, sifted
1 1/2 cups dutch processed cocoa
2 teaspoon vanilla
Place the chocolate into a heatproof bowl. Heat the whipping cream to a simmer, and pour over the chocolate. Cover and set aside.
Beat the butter, icing sugar, cocoa and vanilla in a stand mixer until smooth. Uncover the chocolate and cream mixture and stir until combined. Pour the mixture into the stand mixer and beat on medium high until everything comes together.

Thick Caramel Topping
1/2 cup salted butter
1 cup golden brown sugar 3/4 cup condensed milk 3/4 cup dark corn syrup

1 teaspoon vanilla extract
Place all the ingredients into a medium pot, and place on the stove top on medium/high heat. Stir the mixture as you bring it to a boil. Once it boils, bring the mixture up to 225 degrees, while stirring to prevent it from catching and burning at the bottom of the pot. When it reaches temperature, remove the pot from the stovetop and pour the caramel into a heatproof bowl. Stir in the vanilla and allow to cool completely.
